baked cheddar-broccoli rice cups

Ingredients
- 1 package 10 oz - frozen broccoli, thawed
- 1 cup chicken stock
- 1 cup white rice
- 1/4 cup ranch dressing
- 2 large eggs, lightly beaten
- 3/4 cup grated cheese (any kind is ok...use your favorite)
- - salt and pepper to taste
How To Make baked cheddar-broccoli rice cups

Step 1Preheat oven to 350 degrees. Boil rice, then put in a medium bowl to cool for a minute.

Step 2Throw in all of the ingredients, but only use 1/2 of the cheese. Grease an 8 cup muffin tray, and make mixture into balls that fit muffin cups. Sprinkle rest of cheese on top of balls.

Step 3Put tray in oven, and bake for 25 minutes, until they get golden brown and crisp.
