Ingredients For baked cheddar-broccoli rice cups

  • 1 pkg
    10 oz - frozen broccoli, thawed
  • 1 c
    chicken stock
  • 1 c
    white rice
  • 1/4 c
    ranch dressing
  • 2 lg
    eggs, lightly beaten
  • 3/4 c
    grated cheese (any kind is ok...use your favorite)
  • salt and pepper to taste

How To Make baked cheddar-broccoli rice cups

  • gather ingredients

    Preheat oven to 350 degrees. Boil rice, then put in a medium bowl to cool for a minute.
  • mix all ingredients with rice

    Throw in all of the ingredients, but only use 1/2 of the cheese. Grease an 8 cup muffin tray, and make mixture into balls that fit muffin cups. Sprinkle rest of cheese on top of balls.
  • fill muffin cups, and bake at 350 degrees for 25 minutes or until top begins to brown

    Put tray in oven, and bake for 25 minutes, until they get golden brown and crisp.
