Ingredients

Add to Grocery List

1 pkg
10 oz - frozen broccoli, thawed
1 c
chicken stock
1 c
white rice
1/4 c
ranch dressing
2 large
eggs, lightly beaten
3/4 c
grated cheese (any kind is ok...use your favorite)
salt and pepper to taste

How to Make Baked Cheddar-Broccoli Rice Cups

Step-by-Step

  • 1Preheat oven to 350 degrees.

    Boil rice, then put in a medium bowl to cool for a minute.
  • 2Throw in all of the ingredients, but only use 1/2 of the cheese.

    Grease an 8 cup muffin tray, and make mixture into balls that fit muffin cups. Sprinkle rest of cheese on top of balls.
  • 3Put tray in oven, and bake for 25 minutes, until they get golden brown and crisp.
