Ingredients
- 3-1/2 pounds butternut squash
- 1/4 cup butter
- 1/2 cup diced onion
- 1/4 teaspoon ground nutmeg
- 1/2 cup chicken broth
- 1/3 cup real maple syrup
How To Make baked butternut squash w/ maple syrup

Step 1Heat oven to 400. Halve the squash and place on a lg baking sheet, cut-side up. Bake 50 min or until tender. Scoop out squash meat and transfer to lg bowl. In saucepan, melt butter over med-low heat. Add onion and nutmeg. Saute until onion is tender. Transfer onion to bowl w/ squash. Add chicken broth and syrup. Puree mix in processor until smooth. Season w/ salt and pepper. Return puree to saucepan. Stir over medium heat until heated through. Transfer to serving bowl, serve hot.
