The first Asparagus of spring is always the best,very tender and flavorful. I'm fortunate that I pick mine wild here in Colorado. I serve this up often and there is never any left. The kids LOVE it!! My son asks me, "Can I have another tree to eat?"

Ingredients

  • 1-2 bunch fresh asparagus
  • 4-5 tablespoons (evo) extra virgin olive oil
  • 1-2 teaspoon sea salt

How To Make baked asparagus

  • Step 1
    Preheat oven to 375 degrees. Line a cookie pan with parchment or just oil well. Lay trimmed and washed Asparagus flat. Toss Asparagus with EVO and salt to your liking. Bake for approximately 10-12 minutes until still bright green but slightly limp and tender. I toss once about halfway through the cooking time. Serve on a nice platter and enjoy...

    Note: If the Asparagus are very thin reduce cooking time. If very thick and woody add time. But, toss and keep an eye on it, cooks quickly!!
