This recipe was given to me by a lovely lady in my church, Dee Makepeace, who is an amazingly good cook. I'm not much of a salad eater, but this one I like. ALOT! LOL! Now I bring it to potlucks and family get togethers not just because it tastes delicious, but because it is a very pretty salad and makes a great presentation.
1In small saucepan saute the almonds and the brown sugar until the sugar is melted and almonds are coated nicely with the sugar and set aside. When cool break apart. Watch carefully as can burn very quickly. I like them very sugary so I use the 4 tbs.of sugar but Dee Makepeace's original recipe called for 2 so it's up to you, LOL
2Layer the spinach, cheese, onion, oranges, and the sugar coated almonds in a large bowl or casserole dish.
3For the Dressing:
Mix in a plastic bowl with a lid so you can shake the container to mix (works best I think)mix together the sugar, vinegar, salt, minced onion, poppy seeds, and the vegetable oil. Shake to mix and drizzle over salad. I never use the whole amount as I don't like heavily dressed salads. I find that there is more than enough dressing to make 2 salads out of it. Also if you are taking this salad somewhere it is best to put the dressing on after you get there or it can look a bit wilty.
