aunt marjorie's fiesta squash casserole
This takes a bit of preparation time, but is well worth it. It's almost a meal in itself - all that cheese! It's another of the old Alston Family recipes I'm including in our family cookbook.

Ingredients
- FIRST LAYER
- 3 small zucchini or yellow squash, diced
- 4 - eggs, beaten
- 1/4 cup butter, melted
- 1 cup parmesan cheese, grated
- - salt and pepper to taste
- 1 tablespoon sugar
- 1/2 cup minced onion
- SECOND LAYER
- 3 to 4 medium sized tomatoes, sliced
- - salt and pepper to taste
- THIRD LAYER
- 2 large onions, sliced thinly
- 1 cup sour cream
- 2 cups sharp cheddar, grated
- 1/2 cup mayonnaise
How To Make aunt marjorie's fiesta squash casserole

Step 1Preheat oven to 350°. Mix FIRST LAYER ingredients together well and spread on the bottom of a 3-quart greased casserole dish.

Step 2Place tomatoes in overlapping pattern on top, as the SECOND LAYER. Sprinkle with salt and pepper.

Step 3Place sliced onions over top of tomatoes. Mix the remaining ingredients of THIRD LAYER well, and spread over top of casserole. May sprinkle a little paprika on top for color if desired.

Step 4Bake at 350° for 45 - 60 minutes, until casserole bubbles around the edges for about 15-20 minutes. Cool slightly before slicing into squares for serving.
