This takes a bit of preparation time, but is well worth it. It's almost a meal in itself - all that cheese! It's another of the old Alston Family recipes I'm including in our family cookbook.

Ingredients

  • FIRST LAYER
  • 3 small zucchini or yellow squash, diced
  • 4 - eggs, beaten
  • 1/4 cup butter, melted
  • 1 cup parmesan cheese, grated
  • - salt and pepper to taste
  • 1 tablespoon sugar
  • 1/2 cup minced onion
  • SECOND LAYER
  • 3 to 4 medium sized tomatoes, sliced
  • - salt and pepper to taste
  • THIRD LAYER
  • 2 large onions, sliced thinly
  • 1 cup sour cream
  • 2 cups sharp cheddar, grated
  • 1/2 cup mayonnaise

How To Make aunt marjorie's fiesta squash casserole

  • Step 1
    Preheat oven to 350°. Mix FIRST LAYER ingredients together well and spread on the bottom of a 3-quart greased casserole dish.
  • Step 2
    Place tomatoes in overlapping pattern on top, as the SECOND LAYER. Sprinkle with salt and pepper.
  • Step 3
    Place sliced onions over top of tomatoes. Mix the remaining ingredients of THIRD LAYER well, and spread over top of casserole. May sprinkle a little paprika on top for color if desired.
  • Step 4
    Bake at 350° for 45 - 60 minutes, until casserole bubbles around the edges for about 15-20 minutes. Cool slightly before slicing into squares for serving.
