Another Taste of Home go to recipe! Asparagus is in season! These appetizers are well liked by all who like asparagus (except me, I dont like it) :0 But there are never any left overs when you serve these!

Ingredients

  • 16 - fresh asparagus spears
  • 16 - slices sandwhich bread, crusts removed
  • 8 ounces cream cheese, softened
  • 2 tablespoons fresh or dried chives
  • 8 - bacon strips, cooked and crumbled
  • 1/4 cup melted butter
  • 3 tablespoons greated parmesan cheese

How To Make asparagus roll ups

  • Step 1
    Place Asparagus in a skillet with a small amount of water; cook until crisp tender, about 6-8 minutes. Drain and set aside.
  • Step 2
    Flatten bread with a rolling pin.
  • Step 3
    Combine cream cheese, bacon and chives; spread 1 Tablespoon on each slice of bread. Top with an asparagus spear. Roll up tightly; placing seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese ( I like to use Italian bread crumbs as well)
  • Step 4
    Cut roll ups in half.
  • Step 5
    Bake @ 400 degrees for 10-12 minutes or until lightly browned.
