asparagus/orange spears

My husband loves asparagus and this is his favorite way to enjoy it. I like to make this dish when we have company. Everyone loves it!

Ingredients

  • 1 1/2 pounds fresh asparagus spears
  • 3 tablespoons butter
  • 1 clove garlic minced
  • 2 tablespoons fresh grated orange rind
  • 1/4 cup fresh orange juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

How To Make asparagus/orange spears

  • Step 1
    Clean and prep asparagus spears; Cook asparagus, uncovered, in enough boiling water to cover them, 5-6 minutes depending on the thickness of the spears. You want them crisp tender.
  • Step 2
    Drain and set aside.
  • Step 3
    In a large skillet, melt butter over medium heat; Add the garlic and saute' 1 minute. Remove garlic and set aside.
  • Step 4
    Add orange juice and the rind to the butter in the skillet. Stir.
  • Step 5
    Add the asparagus spears to heat them thoroughly, about a couple of minutes.
  • Step 6
    Remove asparagus to a serving dish. Spoon the heated orange juice mixture over the spears. Sprinkle with salt and pepper. Serve immediately.
