Ingredients
- 1 pound potatoes cut at 1/8 inch, but not all the way through
- 6 tablespoons olive oil, extra virgin
- 1 tablespoon sweet paprika
How To Make accordion potatoes

Step 1Drizzle the potatoes with 5 tbsp. olive oil

Step 2Roast at 375 degrees for 20 minutes. Put a small bay leaf or basil leaf into each potato and roast 20 minutes longer

Step 3Discard the bay leaves and drizzle with remaining olive oil and serve hot.
