zucchini "mujver" patties
I got this recipe t a long time ago don't remember how But I have done various squashes with it. Its a Mediterranean dish. so my Mediterranean friends have tried and crtique them ... with feedback. Here is my version

Ingredients
- 1 large zucchini squash, grated
- 1 large onion, grated
- 4 tablespoons flour
- 4 medium eggs
- 1 bunch dill, dried
- 1 teaspoon parsley
- 1/2 cup oil
- - salt and pepper, to taste
- - cumin, to taste
How To Make zucchini "mujver" patties

Step 1brown onions 2 mins in a soup spoon of butter

Step 2add squash fry 2 more mins

Step 3pour EVERYTHING including those in #1 and #2 in a bowl,except the oil. mix the mixture in the bowl well til WELL BLENDED

Step 4Form walnut size scoops/balls of the mix into the oil

Step 5DON'T CROWD YOUR PAN, but rather.. FRY IN BATCHES if you have to! they will stick to each other like superglue!

Step 6when 1st side is golden turn to other side

Step 7Serve hot off the pan

Step 8Cooks tip soup spoons about the size of a walnut. So you can use that frying spoon to form your scoops
