1/2 c
fat free egg substitute
1/2 tsp
seasame oil
1 tsp
olive oil
1 c
chopped onions
3 clove
garlic, minced
3/4 c
each, diced carrots and diced celery
1/2 c
chopped green onions
1 tsp
grated ginger roots
1/4 c
reduced sodium soy sauce
1 Tbsp
4 c
cooked brown rice

How to Make Vegetable Rice


  • 1Whisk together egg substitute and sesame oil in a small bowl. Set aside.
  • 2Add olive oil to a large non stick skillet and place over medium heat. Pour egg mixture over bottom of skillet. Cook until set, about 3 minutes. Remove from skillet and cut into bite-sized pieces. Set aside.
  • 3Spray same skillet with non stick spray. Add onions, garlic, carrots, green onins, and ginger root. Cook and stir over medium heat for about 5 minutes, until vegetables are softened. Add soy sauce, honey, cooked egg, and cooked rice. Mix well. Cook for 2-3 minutes, until heated through.
