This is a nice savoury side dish.

Ingredients

  • 1/2 cup fat free egg substitute
  • 1/2 teaspoon seasame oil
  • 1 teaspoon olive oil
  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 3/4 cup each, diced carrots and diced celery
  • 1/2 cup chopped green onions
  • 1 teaspoon grated ginger roots
  • 1/4 cup reduced sodium soy sauce
  • 1 tablespoon honey
  • 4 cups cooked brown rice

How To Make vegetable rice

  • Step 1
    Whisk together egg substitute and sesame oil in a small bowl. Set aside.
  • Step 2
    Add olive oil to a large non stick skillet and place over medium heat. Pour egg mixture over bottom of skillet. Cook until set, about 3 minutes. Remove from skillet and cut into bite-sized pieces. Set aside.
  • Step 3
    Spray same skillet with non stick spray. Add onions, garlic, carrots, green onins, and ginger root. Cook and stir over medium heat for about 5 minutes, until vegetables are softened. Add soy sauce, honey, cooked egg, and cooked rice. Mix well. Cook for 2-3 minutes, until heated through.
