Ingredients
- 1/2 cup fat free egg substitute
- 1/2 teaspoon seasame oil
- 1 teaspoon olive oil
- 1 cup chopped onions
- 3 cloves garlic, minced
- 3/4 cup each, diced carrots and diced celery
- 1/2 cup chopped green onions
- 1 teaspoon grated ginger roots
- 1/4 cup reduced sodium soy sauce
- 1 tablespoon honey
- 4 cups cooked brown rice
How To Make vegetable rice

Step 1Whisk together egg substitute and sesame oil in a small bowl. Set aside.

Step 2Add olive oil to a large non stick skillet and place over medium heat. Pour egg mixture over bottom of skillet. Cook until set, about 3 minutes. Remove from skillet and cut into bite-sized pieces. Set aside.

Step 3Spray same skillet with non stick spray. Add onions, garlic, carrots, green onins, and ginger root. Cook and stir over medium heat for about 5 minutes, until vegetables are softened. Add soy sauce, honey, cooked egg, and cooked rice. Mix well. Cook for 2-3 minutes, until heated through.
