sweet corn pudding
This is a sweet corn side I got from a roommate I had 20 years ago who also previously owned a restaurant in Ocean City. She gave me this recipe which I shared with my family and has been given out to extended family. It is requested constantly and has become a family wide staple for holiday dinners for years. I have changed the recipe a little bit but is essentially as deadly wonderful as it was the first time I made it:D It can also easily be doubled or tripled but I would use multiple baking dishes so the overall cooking time remains the same. I will take pics next time I make this.

Ingredients
- 1/2 cup sugar
- 3 tablespoons corn starch
- 1 large can cream style corn
- 2 - eggs
- 1 can (13oz) evaporated milk
- 1/4 teaspoon vanilla extract

How To Make sweet corn pudding

Step 1Preheat oven to 350 degrees. Grease 1 1/2 quart baking dish.

Step 2Using a hand mixer, combine all ingredients, except the butter, mixing well.

Step 3Pour into baking dish, dot with butter (I usually just drop 5 finger sized pieces of butter around the top), bake 1 hour (start checking after 45 minutes) until it has completely set except a quarter sized hole in the very center that will still be jiggly. Let sit for 15 minutes and than enjoy!
