A recipe I created after enjoying this dish in Singapore, where it's called Dau Miu (pronounced 'Doe Meow' if you want to ask at your local Chinese) One of the tastiest veggie dishes you will EVER have - guaranteed! Also makes an excellent side/base for my Yakitori Seabass recipe... These shoots can be harder to find in the US. Try your local Asian grocery or farmers market. The best ones are the youngest, smallest shoots (those in the main picture), but slightly older shoots (second pic) will work just as well with this recipe, though the volume will not reduce as much.

Ingredients

  • 1 1/2 pounds fresh pea shoots
  • 3 cloves fresh garlic - minced
  • 1/2 cup chicken stock
  • 1 teaspoon salt - or to taste
  • 1 tablespoon vegetable oil

How To Make stir fried pea shoots with garlic - 'dau miu'

  • Step 1
    Heat up the oil in Wok or skillet on Med-High Heat
  • Step 2
    Add garlic, stir fry for 15-20 seconds until fragrant
  • Step 3
    Add Pea Shoots, salt and chicken stock
  • Step 4
    toss constantly - about a minute - until pea shoots begin to sweat - shiny and hot but not totally limp! They will reduce quite a bit in volume.
  • Step 5
    Serve and enjoy!
