I MADE THIS QUICK VEGETABLE DISH TO GO WITH a precooked BBQ Pork I had purchased from Sam's Club for a quick Fix Dinner.

It was simple easy and quite tasty. It was so good I skipped on the potatoes and the B B Q & just ate the veggies. I love all sorts of veggies and this was a quick fix side dish.

A great way to add fresh veggies to the dinner table in a hurry.

Ingredients

Add to Grocery List

  • 1 1/2 c
    small baby carrots
  • 1 lb
    fresh sliced mushrooms
  • 1 lb
    fresh baby spinach
  • 3 clove
    fresh garlic minced
  • 2 large
    onions, sliced thick
  • ·
shaved/shredded cheese of choice (i used mozzarella
  • 1 tsp
    steak seasoning
  • 2-3 Tbsp
    olive oil

How to Make SPINACH & MUSHROOM SAUTE'

Step-by-Step

  1. In a large skillet(I used a 16 inch size) add the olive oil and heat over medium high heat.
  2. Add the baby carrots and sauté for about 5-6 minutes.
  3. Then add the sliced onions, garlic and mushrooms, allow to cook for about 5 minutes or until they begin to soften.
  4. Now add the fresh baby spinach, it will look like a lot, but shrinks very quickly. Stir to mix with other veggies, until spinach wilts, add the steak seasoning, and allow to cook for a couple extra minutes.
  5. Remove from heat, add the shredded cheese, and cover with lid to allow cheese to melt.
  6. Or serve individually and add the shredded cheese while veggies are hot stir so that cheese can melt. Enjoy with other accompaniments if desired.
