Via our CSA box notes-original recipe source unknown. Will also work substituting golden beets. I added the shallots. Easy!

Ingredients For spiced roasted beets

1 bunchbeets, tops trimmed, scrubbed well and either cut in half or quartered (depending on their size)

1 lgshallot, peeled and cut into crescents

2 Tbspcoconut oil

1/2 tspground cumin
-
1/2 tspspanish smoked paprika
-
pinchchili powder (we tried aleppo powder)

1/4 tspsalt
-
1/4 tspcracked black pepepr
How To Make spiced roasted beets

1Preheat oven to 400 degrees. Note: I don't peel the beets but you can if you prefer.

2Toss beets and shallot with coconut oil and lay flat on sheet pan. Toss with the remaining ingredients. Roast for 40 minutes, or until tender.

3Sprinkle with some additional salt and pepper, if desired. Serve warm.
