spiced roasted beets
Via our CSA box notes-original recipe source unknown. Will also work substituting golden beets. I added the shallots. Easy!

Ingredients
- 1 bunch beets, tops trimmed, scrubbed well and either cut in half or quartered (depending on their size)
- 1 large shallot, peeled and cut into crescents
- 2 tablespoons coconut oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon spanish smoked paprika
- pinch chili powder (we tried aleppo powder)
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepepr
How To Make spiced roasted beets

Step 1Preheat oven to 400 degrees. Note: I don't peel the beets but you can if you prefer.

Step 2Toss beets and shallot with coconut oil and lay flat on sheet pan. Toss with the remaining ingredients. Roast for 40 minutes, or until tender.

Step 3Sprinkle with some additional salt and pepper, if desired. Serve warm.
