spiced roasted beets

Via our CSA box notes-original recipe source unknown. Will also work substituting golden beets. I added the shallots. Easy!

yield 3-6 (depending on the size of the beets)

Ingredients

  • 1 bunch beets, tops trimmed, scrubbed well and either cut in half or quartered (depending on their size)
  • 1 large shallot, peeled and cut into crescents
  • 2 tablespoons coconut oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon spanish smoked paprika
  • pinch chili powder (we tried aleppo powder)
  • 1/4 teaspoon salt
  • 1/4 teaspoon cracked black pepepr

How To Make spiced roasted beets

  • Step 1
    Preheat oven to 400 degrees. Note: I don't peel the beets but you can if you prefer.
  • Step 2
    Toss beets and shallot with coconut oil and lay flat on sheet pan. Toss with the remaining ingredients. Roast for 40 minutes, or until tender.
  • Step 3
    Sprinkle with some additional salt and pepper, if desired. Serve warm.
