2 slicebacon, cooked
2 ctorn fresh baby spinach
1 cfrozen black eyed peas, thawed,drained1/2
1/2 ccooked long grain rice
1 Tbspparmesan cheese, grated
1/8 tsphot pepper sauce
1/4 cmexican blend shredded cheese
How to Make Southern Peas and Rice
- In a small nonstick skillet, cook bacon until crispy over medium heat. Using a slotted spoon,remove to paper towels; drain m reserving 1 teaspoon drippings.
- Add spinach to drippings in skillet; cook for 3-4 minutes or until tender. Stir in the peas,rice, Parmesan cheese, salt, hot sauce and bacon. Cook 5 minutes longer or until heated through. Sprinkle with cheese.
