    bacon, cooked
  • 2 c
    torn fresh baby spinach
  • 1 c
    frozen black eyed peas, thawed,drained1/2
  • 1/2 c
    cooked long grain rice
  • 1 Tbsp
    parmesan cheese, grated
  • 1/4 tsp
  • 1/8 tsp
    hot pepper sauce
  • 1/4 c
    mexican blend shredded cheese

How to Make Southern Peas and Rice


  1. In a small nonstick skillet, cook bacon until crispy over medium heat. Using a slotted spoon,remove to paper towels; drain m reserving 1 teaspoon drippings.
  2. Add spinach to drippings in skillet; cook for 3-4 minutes or until tender. Stir in the peas,rice, Parmesan cheese, salt, hot sauce and bacon. Cook 5 minutes longer or until heated through. Sprinkle with cheese.
