Ingredients

  • 1/2 lb
    bacon chopped
  • 1 small
    onion, chopped
  • 1 clove
    garlic, chopped
  • 1
    green pepper, chopped
  • 1 c
    okra, sliced
  • 1 c
    zucchini, sliced
  • 1/2 c
    yellow squash, sliced
  • 1 medium
    tomato, chopped
  • 2
    eggs
  • -
    salt and pepper to taste
  • 1/4 tsp
    parsley

How to Make Skillet Zucchini

Step-by-Step

  1. Brown bacon slightly in skillet.
    Add onion, garlic, and green pepper; sauté.
  2. Add okra, zucchini, and yellow squash and cook until tender.
  3. Stir in tomato and cook only long enough to heat.
  4. Beat eggs slightly and pour over vegetables stirring until eggs are scrambled.
    Salt and pepper to taste and sprinkle with parsley before serving.
