  • 2 tsp
    olive oil
  • 2 medium
    zucchini or yellow squash cut into 2 inch chunks
  • 1 tsp
    dried oregano
  • 2 Tbsp
    parsley, freshly chopped
  • 1/8 tsp
  • 1/8 tsp
  • 3 Tbsp
    crumbled feta cheese

How to Make Sauteed Zucchini with Feta and Oregano


  1. Heat oil in pan over med-high heat. Add zucchini and oregano. Stir occasionally until crisp-tender (4-6 minutes).
  2. Remove from heat. Stir in parsley, salt, and pepper.
  3. Transfer to plates and sprinkle with cheese.
