sauteed zucchini with feta and oregano

I like to use one zucchini and one yellow squash. GO OREGON DUCKS! For my WW friends, 1 SP per serving.

Ingredients

  • 2 teaspoons olive oil
  • 2 medium zucchini or yellow squash cut into 2 inch chunks
  • 1 teaspoon dried oregano
  • 2 tablespoons parsley, freshly chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons crumbled feta cheese

How To Make sauteed zucchini with feta and oregano

  • Step 1
    Heat oil in pan over med-high heat. Add zucchini and oregano. Stir occasionally until crisp-tender (4-6 minutes).
  • Step 2
    Remove from heat. Stir in parsley, salt, and pepper.
  • Step 3
    Transfer to plates and sprinkle with cheese.
