This is a wonderful summer side dish with all the squash in either your garden or the local farmer's market.

  • 2 Tbsp
  • 2 large
    shallots, thinly sliced
  • 2 Tbsp
    chopped garlic
  • 1 tsp
    tarragon, dried
  • 1/2 lb
    yellow crookneck squash, trimmed, sliced into 1/3" rounds
  • 1/2 lb
    zucchini, trimmed, sliced into 1/3" rounds

How to Make Sauteed Summer Squash


  1. Melt butter in a large skillet over medium-high heat.
  2. Add shallots, garlic, and tarragon. Saute until onion is just tender, about 2 minutes.
  3. Add yellow squash and zucchini, and saute until crisp-tender, about 8 min. Season with salt and pepper.
