·1/2 medium eggplant,sliced thin
·3-4 tablespoons olive oil
·2 garlic cloves,minced
·1 bell pepper,sliced thin
·1 small tomato,peeled,seeded and diced
·splash of white wine
·salt to taste
How to Make Sautéed Eggplant
- Sprinkle eggplant with salt a strainer for 20 mins.Rinse well.Pat dry.Heat 2 T.oil add onion,sauté 3-4 mins,add garlic,bell pepper and eggplant.Add more oil if needed,sautéing 4-5 mins.Add tomato,season with salt add a splash dry white wine,cook 5 mins,add pepper. and rosemary.
