sautéed eggplant
I LOVE eggplant,when I saw this recipe on UTube I knew I would love it and I do! I'm not a big fan of rosemary,I usually omit it and add parsley or cilantro. This is enough just for me,my husband doesn't like eggplant,refuses to even try it. I usually have this as a side dish or I put it over pasta or rice.Delicious.

Ingredients
- - 1/2 medium eggplant,sliced thin
- - salt
- - 3-4 tablespoons olive oil
- - onions,sliced thin
- - 2 garlic cloves,minced
- - 1 bell pepper,sliced thin
- - 1 small tomato,peeled,seeded and diced
- - splash of white wine
- - salt to taste
- - pepper,to taste
How To Make sautéed eggplant

Step 1Sprinkle eggplant with salt a strainer for 20 mins.Rinse well.Pat dry.Heat 2 T.oil add onion,sauté 3-4 mins,add garlic,bell pepper and eggplant.Add more oil if needed,sautéing 4-5 mins.Add tomato,season with salt add a splash dry white wine,cook 5 mins,add pepper. and rosemary.
