Ingredients For polenta caprese

  • 1 c
    yellow corn meal
  • 3 c
    water
  • 1
    tomato, seeded and diced
  • 1 c
    mozzarella cheese, shredded
  • 1 bunch
    basil, shredded
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 2 Tbsp
    butter

How To Make polenta caprese

  • 1
    Bring to a boil, water with salt, pepper, butter and corn meal.
  • 2
    simmer about 15 minutes , stirring often.
  • 3
    add in the tomatoes, basil & cheese, stir till all incorporated.
  • 4
    pour into a cookie sheet and smooth out...let cool, till harden...about 30 min in fridge.
