  • 1 c
    yellow corn meal
  • 3 c
  • 1
    tomato, seeded and diced
  • 1 c
    mozzarella cheese, shredded
  • 1 bunch
    basil, shredded
  • 1 tsp
  • 1 tsp
  • 2 Tbsp

How to Make Polenta Caprese


  1. Bring to a boil, water with salt, pepper, butter and corn meal.
  2. simmer about 15 minutes , stirring often.
  3. add in the tomatoes, basil & cheese, stir till all incorporated.
  4. pour into a cookie sheet and smooth out...let cool, till harden...about 30 min in fridge.
