Ingredients
- 1 cup yellow corn meal
- 3 cups water
- 1 - tomato, seeded and diced
- 1 cup mozzarella cheese, shredded
- 1 bunch basil, shredded
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons butter
How To Make polenta caprese

Step 1Bring to a boil, water with salt, pepper, butter and corn meal.

Step 2simmer about 15 minutes , stirring often.

Step 3add in the tomatoes, basil & cheese, stir till all incorporated.

Step 4pour into a cookie sheet and smooth out...let cool, till harden...about 30 min in fridge.
