paleo cauliflower rice with carrots

Made this for my family and didn't tell them it was cauliflower. After they ate it, then I told them - they were surprised! This has become a staple for us. I make it at least once a week.

Ingredients

  • 1 - head cauliflower
  • 1 - onion, medium size, chopped
  • 1-1/4 cup carrot, shredded (i buy mine shredded)
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon trader joe's 21 seasoning salute blend
  • 1/4-1/2 teaspoon seasoning salt (adjust more or less according to your taste)
  • 1 tablespoon coconut oil, heaping

How To Make paleo cauliflower rice with carrots

  • Step 1
    Wash & cut cauliflower, put into food processor and pulse till resembles the texture of rice, put aside.
  • Step 2
    In large saute/fry pan, add the coconut oil, carrots and onion. Saute till onion starts to get translucent, about 10 minutes
  • Step 3
    Add garlic to the mixture and saute for about 1 minute
  • Step 4
    Now add the cauliflower, stir, and saute for about 2 minutes, add 1-2 tbs of water as needed, cover, lower heat and cook for an additional 10-12 minutes or until tender (depending on the size of your head of cauliflower).
  • Step 5
    Serve and enjoy!
