corn & black bean salad by nor

This is a dip I created for Nacho or Tortilla chips. It is full of Beans, cheese, and lot's of veggies. It is a favorite in my home. Great for a party or appetizer. I have even had it for lunch. Enjoy all!

Ingredients

  • THIS DISH CAN BE SERVED AS A DIP OR A SIDE SALAD. SERVE WITH DORITOS OR TOSTITO'S AS A DIP. CRUSH CHIPS AND SPRINKLE ON TOP TO SERVE AS A SALAD
  • 11 ounces can of crisp corn,or 11 ounces of fresh cooked corn
  • 15 ounces can of black beans
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion or vidalia onion
  • 1/2 cup hellman"s mayonaise
  • 1/2 teaspoon cummin
  • 1/4-1/2 teaspoon cayenne pepper
  • 2 cups taco seasoned cheese in bag
  • 1 cup chopped grape tomatoes
  • 1 cup l for serving as a salad. crushed nacho cheese dorito's
  • 2 tablespoons lime juice
  • 1/8 cup chopped green onion

How To Make corn & black bean salad by nor

  • Step 1
    Drain the corn. Rinse and drain the black beans. Empty both in to a large bowl. Add the lime juice and toss together.
  • Step 2
    Chop the Red and green bell peppers. Dice the onion,and add it to the corn,and beans. Stir together well.
  • Step 3
    Mix the mayonnaise with the Cumin,and Cayenne pepper. Add the spiced mayonnaise in to the bean mixture. Stir well. Fold in the cheese,and mix well. Chill for at least an hour.
  • Step 4
    Before serving. Top with chopped grape tomatoes mixed with green onion. Serve with Any style crushed Tortilla chips. Nacho Dorito's are awesome on the salad. You may also serve as a dip for chips.
