marinated cucumbers & onions w/tomatoes

Ingredients
- 1 - english cucumber
- 1 tablespoon salt
- 1/2 cup water
- 1/2 cup apple cider vinegar
- 1/2 cup sugar
- 4 medium tomatoes, cut in chunks
How To Make marinated cucumbers & onions w/tomatoes

Step 1Slice cucumber into very thin slices. Put in bowl with salt Refrigerate for 2 hours

Step 2Squeeze by hand in small batches the liquid from the cucumbers. Pat with paper towel to remove most of the liquid and the salt.

Step 3Heat water, vinegar, and sugar until sugar is melted. Let cool. Pour over cucumbers.

Step 4Add pepper to taste. Refrigerate.

Step 5Cut tomatoes into chunks. Pour off some of the liquid from the cukes and onions. Add to tomatoes just before serving.
