Ingredients

1
english cucumber
1 Tbsp
salt
1/2 c
water
1/2 c
apple cider vinegar
1/2 c
sugar
4 medium
tomatoes, cut in chunks

How to Make MARINATED CUCUMBERS & ONIONS W/TOMATOES

Step-by-Step

  • 1Slice cucumber into very thin slices.
    Put in bowl with salt
    Refrigerate for 2 hours
  • 2Squeeze by hand in small batches the liquid from the cucumbers. Pat with paper towel to remove most of the liquid and the salt.
  • 3Heat water, vinegar, and sugar until sugar is melted.
    Let cool.
    Pour over cucumbers.
  • 4Add pepper to taste.
    Refrigerate.
  • 5Cut tomatoes into chunks.
    Pour off some of the liquid from the cukes and onions.
    Add to tomatoes just before serving.
