Ingredients

  • 1
    english cucumber
  • 1 Tbsp
    salt
  • 1/2 c
    water
  • 1/2 c
    apple cider vinegar
  • 1/2 c
    sugar
  • 4 medium
    tomatoes, cut in chunks

How to Make MARINATED CUCUMBERS & ONIONS W/TOMATOES

Step-by-Step

  1. Slice cucumber into very thin slices.
    Put in bowl with salt
    Refrigerate for 2 hours
  2. Squeeze by hand in small batches the liquid from the cucumbers. Pat with paper towel to remove most of the liquid and the salt.
  3. Heat water, vinegar, and sugar until sugar is melted.
    Let cool.
    Pour over cucumbers.
  4. Add pepper to taste.
    Refrigerate.
  5. Cut tomatoes into chunks.
    Pour off some of the liquid from the cukes and onions.
    Add to tomatoes just before serving.
