marinated cucumbers & onions w/tomatoes

Ingredients

  • 1 - english cucumber
  • 1 tablespoon salt
  • 1/2 cup water
  • 1/2 cup apple cider vinegar
  • 1/2 cup sugar
  • 4 medium tomatoes, cut in chunks

How To Make marinated cucumbers & onions w/tomatoes

  • Step 1
    Slice cucumber into very thin slices. Put in bowl with salt Refrigerate for 2 hours
  • Step 2
    Squeeze by hand in small batches the liquid from the cucumbers. Pat with paper towel to remove most of the liquid and the salt.
  • Step 3
    Heat water, vinegar, and sugar until sugar is melted. Let cool. Pour over cucumbers.
  • Step 4
    Add pepper to taste. Refrigerate.
  • Step 5
    Cut tomatoes into chunks. Pour off some of the liquid from the cukes and onions. Add to tomatoes just before serving.
