What can I say I love beans, any kind and anyway! Put two kinds of beans together with some spices to make this kick butt dish. (My brother named them)
You will get a bit of spicy, sweet and tangy. I buy bulk dried beans, cook down and freeze, but You can certainly use canned, drained and rinsed.
Served with a good beef hot dog tonight, but thought might be a nice side dish for good friday.

Ingredients

1 1/4 c
pinto beans
1 1/4 c
cannelini beans
1-2
pickled jalapeno chopped
1
shallot chopped
1 Tbsp
chopped green pepper
2 Tbsp
prepared salsa
2 Tbsp
baby rays bbq sauce
1 tsp
salt
1/2 tsp
pepper
pinch
red pepper flakes
1 tsp
cumin
cilantro, fresh (optional)

Step-By-Step

1Combine all ingredients except fresh cilantro in baking dish.
Bake low at 350 for 30min.

Serve with fresh chopped cilantro.
