kick butt veggie beans
What can I say I love beans, any kind and anyway! Put two kinds of beans together with some spices to make this kick butt dish. (My brother named them) You will get a bit of spicy, sweet and tangy. I buy bulk dried beans, cook down and freeze, but You can certainly use canned, drained and rinsed. Served with a good beef hot dog tonight, but thought might be a nice side dish for good friday.

Ingredients
- 1 1/4 cups pinto beans
- 1 1/4 cups cannelini beans
- 1-2 - pickled jalapeno chopped
- 1 - shallot chopped
- 1 tablespoon chopped green pepper
- 2 tablespoons prepared salsa
- 2 tablespoons baby rays bbq sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- pinch red pepper flakes
- 1 teaspoon cumin
- - cilantro, fresh (optional)
How To Make kick butt veggie beans

Step 1Combine all ingredients except fresh cilantro in baking dish. Bake low at 350 for 30min. Serve with fresh chopped cilantro.
