holly's yum yums cheesy cauliflower!

I was inspired from Lisa Nicometi Garrow Pantry Cleaner's recipe Cheesy Cauliflower Rice! I was going to make her's then my creative juices started flowing! I used my electric skillet but it is not a category to select for cooking method! the picture shows it almost done, I cooked it about 5 more mins. from when the pic was taken and it was THICK and delis!

Ingredients

  • 1 bag frozen cauliflower
  • 4 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup or more chicken broth
  • 1 tablespoon dry mustard

How To Make holly's yum yums cheesy cauliflower!

  • Step 1
    heat electric skillet to 300.
  • Step 2
    add cream cheese, cheddar cheese and melt a little more than half way
  • Step 3
    add sour cream and start out with 2-3 tablespoons of chicken broth. (you will add more as it melts more. you can add Dry mustard at this time or wait a little longer until it is a little more creamier!
  • Step 4
    when melted add frozen cauliflower and just keep mixing every few minutes. keep adding chicken broth a few tablespoons at a time until it is creamy. I kept the lid on after I mixed it each time I made sure to put the lid back on to steam the cauliflower!
  • Step 5
    Once you have it creamy and a little watery kick up your heat to 350 or so put the lid back on and let it thicken..stirring occasionally.
