~ Healthy Kale & Spinach Side ~

- 1 lb
- each - fresh kale - fresh spinach
- 16 oz
- sliced portabella mushrooms
- sweet onion, slivered
- 2 Tbsp
- dried garlic flakes
- 1 c
- chicken broth
- & pepper
- pepper flakes - optional
- 1 Tbsp
- mrs dash - garlic and herb seasoning - or to taste
RECIPE CAN BE HALVED - I MADE ENOUGH FOR 12 MEALS
How to Make ~ Healthy Kale & Spinach Side ~
- 1I did this in 2 batches, as it's a pot full until greens wilt.
Place 1/2 cup broth in large stock pot, 1/2 the mushrooms, spinach, kale, onion and spices...Over medium heat, simmer until greens are wilted and onions and mushrooms are tender. Taste and season more if needed.
Repeat or if you have a very large pot, you could make it all at once. It will shrink down to not near as much as you think it will be. I got about 12 - 1 cup servings. Can be stored in refrigerator and heated as needed.
