grilled broccoli & mushrooms with lemons

These veggies are delicious! Lemony with just a bit of a 'bite'.

Ingredients

  • 2 bunches broccoli, fresh, cut into large spears
  • 6 large white mushrooms, halved
  • 2 - lemons, quartered
  • 2 tablespoons olive oil, extra virgin, plus more for extra drizzle
  • 1/2 - 1 teaspoons kosher salt (or sea salt)
  • 1/2 teaspoon cracked pepper, fresh ground
  • 1/2 teaspoon red pepper flakes, more or less to taste

How To Make grilled broccoli & mushrooms with lemons

  • Step 1
    Combine all ingredients in a large ziplock bag (or bowl with secure lid)
  • Step 2
    Gently toss, turning bag to coat all pieces well
  • Step 3
    Place directly on grill, or you can use a veggie grilling pan with holes so no pieces fall through.
  • Step 4
    Grill until just cooked to crisp-tender, but not charred. About 20-30 minutes when set off center of heat.
  • Step 5
    Place in serving bowl and squeeze 2-4 of the lemon slices over the broccoli & mushrooms, then drizzle with a bit more olive oil. Toss & serve.
