Ingredients
- 4 - beets, trimmed
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 - onion, finely chopped
- 1 - tomato, chopped
- 2 tablespoons chopped fresh cilantro
- 1/4 teaspoon ground cumin
- 1/4 teaspoon curry powder
- 1 tablespoon vinegar or lemon juice
- 3 tablespoons olive oil
- 1 pinch sugar
- 1 pinch salt, or to taste
- 1 pinch cayenne pepper, or to taste
How To Make grilled beets with moroccan dressing

Step 1Prepare a charcoal fire or light a gas grill.

Step 2Brush the beets with olive oil and place over medium-low coals. Cook slowly until they can be easily pierced with a fork, an hour to an hour and a half.

Step 3Remove from heat, peel, then cut into thick slices.

Step 4Meanwhile, combine the garlic, onion, tomato, cilantro, cumin, curry powder, vinegar (or lemon), and olive oil. Toss with the beets. Taste for seasoning.

Step 5Serve warm or room temperature.

Step 6NOTE: Canned beets can be substituted. If unsliced, they can be place a few minutes on the grill to pick up some smoky flavor.
