Ingredients For grilled beets with moroccan dressing

    beets, trimmed
  • 1 Tbsp
    olive oil
  • 3 clove
    garlic, minced
  • 1
    onion, finely chopped
  • 1
    tomato, chopped
  • 2 Tbsp
    chopped fresh cilantro
  • 1/4 tsp
    ground cumin
  • 1/4 tsp
    curry powder
  • 1 Tbsp
    vinegar or lemon juice
  • 3 Tbsp
    olive oil
  • 1 pinch
    sugar
  • 1 pinch
    salt, or to taste
  • 1 pinch
    cayenne pepper, or to taste

How To Make grilled beets with moroccan dressing

    Prepare a charcoal fire or light a gas grill.

    Brush the beets with olive oil and place over medium-low coals. Cook slowly until they can be easily pierced with a fork, an hour to an hour and a half.

    Remove from heat, peel, then cut into thick slices.
  • 4
    Meanwhile, combine the garlic, onion, tomato, cilantro, cumin, curry powder, vinegar (or lemon), and olive oil. Toss with the beets. Taste for seasoning.

    Serve warm or room temperature.

    NOTE: Canned beets can be substituted. If unsliced, they can be place a few minutes on the grill to pick up some smoky flavor.
