beets, trimmed
1 Tbsp
olive oil
3 clove
garlic, minced
onion, finely chopped
tomato, chopped
2 Tbsp
chopped fresh cilantro
1/4 tsp
ground cumin
1/4 tsp
curry powder
1 Tbsp
vinegar or lemon juice
3 Tbsp
olive oil
1 pinch
1 pinch
salt, or to taste
1 pinch
cayenne pepper, or to taste

How to Make Grilled Beets with Moroccan Dressing


  • 1Prepare a charcoal fire or light a gas grill.
  • 2Brush the beets with olive oil and place over medium-low coals. Cook slowly until they can be easily pierced with a fork, an hour to an hour and a half.
  • 3Remove from heat, peel, then cut into thick slices.
  • 4Meanwhile, combine the garlic, onion, tomato, cilantro, cumin, curry powder, vinegar (or lemon), and olive oil. Toss with the beets. Taste for seasoning.
  • 5Serve warm or room temperature.
  • 6NOTE: Canned beets can be substituted. If unsliced, they can be place a few minutes on the grill to pick up some smoky flavor.
