green beans with almond-butter sauce
There is no almond butter in this recipe (although it sounds great to me); however it uses honey, almonds and whole grain mustard as a dressing over the green beans.

Ingredients
- 2 pounds green beans, fresh and trimmed
- 1/3 cup butter
- 1 cup slivered almonds, toasted
- 1 tablespoon whole grain mustard
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons shallots, minced
- 1 teaspoon garlic, minced
- - salt and pepper to taste
How To Make green beans with almond-butter sauce

Step 1Blanch the green beans in lightly salted boiling water until tender and bright green, 3- 4 minutes. Plunge into cold water, drain when cool, set aside.

Step 2Melt the butter in a large heavy skillet over medium heat. Add the balance of the ingredients and saute gently for 2-3 minutes. Season with salt and pepper. Place green beans in a serving dish and pour sauce over green beans.

Step 3Or, you may add the green beans to the sauce, season with salt & pepper and toss to coat.
