green bean salad with ranch sauce

This is an easy make ahead salad that just gets better the longer it refrigerates. Everything that goes great with green beans is in here...onion, bacon, tomato, and red potato. Every bite is covered in creamy ranch sauce - yum! This will be great with your favorite grilled, roasted, or bbq dishes.

Ingredients

  • 1 pound green beans, blanched in salted water, cut into 1 inch pieces
  • 1/2 cup diced onion, red would be pretty, I used white
  • 1 medium tomato, seeded and chopped
  • 1 medium red potato, diced 1/4 to 1/2 inch cubed, boiled until tender
  • 3 slices turkey bacon, cooked and diced
  • 2 tablespoons shredded Parmesean cheese
  • 1/2 teaspoon fresh ground pepper
  • RANCH SAUCE:
  • 3 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/3 cup milk
  • 1 1/2 tablespoons Hidden Valley Ranch seasoning mix

How To Make green bean salad with ranch sauce

  • Step 1
    In a large mixing bowl combine green beans, onion, tomato and potato.
  • Step 2
    In a separate dish mix ingredients for ranch sauce until well combined. Mixture will be thick. Pour over veggies.
  • Step 3
    Mix until well combined. Add Parmesan cheese, and pepper. Stir well. Top with crumbled bacon. Refrigerate until ready to serve. Season with additional salt and pepper if desired.
