These carrots make a great substitute for mashed potatoes, and the Vitamin A content is much higher. I use these when a meal already has a high-carbohydrate component. I usually have to double the recipe when serving more than 3 or 4 people.

Ingredients
- 1 pound baby carrots, peeled
- - salted water to cover
- 2-4 tablespoons honey, sorghum, brown sugar, or maple syrup
- 1/3 cup whipping cream
- 1 pinch salt, to taste
How To Make golden carrot whip

Step 1Cook carrots in boiling salted water until they are very soft. They should pierce easily with a fork, just like potatoes when you cook for mashing. This may take 30 or more minutes. Drain well.

Step 2Place cooked carrots in mixing bowl. Add the honey or syrup and MASH WELL with a potato masher. Start with the smaller amount of sweetener and taste before adding more.

Step 3With a mixer, whip in the cream in a slow stream. The whipped carrots will not be as smooth as whipped potatoes, but the taste will be wonderful! Taste and add salt if desired.

Step 4When uniformly mixed, transfer carrots to serving dish. If you use a microwave-safe dish, you can make these a little ahead of time and reheat before placing on the table.
