I love this salad. I request it every Christmas, and finally got Grannie to supervise me while I made it so that it would be good. I don't trust myself to cook things like she does unless she is there to guide me through it until I feel comfortable that I haven't messed it up. The slightly sweet and sour nature of this dish has made it a family favorite.

Ingredients

  • 1 cup vegetable oil
  • 1 cup sugar
  • 1 cup vinegar
  • 1 can english peas
  • 1 can white shoe peg corn
  • 1 bunch green onions
  • 1 jar pimentos
  • - salt and pepper, to taste

How To Make english pea salad

  • Step 1
    Combine sugar and vinegar in microwave safe bowl. Stir until mostly dissolved. Add oil and heat in microwave until boiling.
  • Step 2
    Chop green onions and add to boiling mixture to blanch. (This helps the onion to not bother some people with sensitive stomachs, like my Grannie.)
  • Step 3
    Drain peas, corn, and pimentos. Add to mixture. Gently blend ingredients. Add salt and pepper to taste.
  • Step 4
    Refrigerate until chilled. (This salad is best when made in advance so that all of the flavors have a chance to incorporate.)
