1 cvegetable oil
1 can(s)english peas
1 can(s)white shoe peg corn
1 bunchgreen onions
·salt and pepper, to taste
How to Make English Pea Salad
- Combine sugar and vinegar in microwave safe bowl. Stir until mostly dissolved. Add oil and heat in microwave until boiling.
- Chop green onions and add to boiling mixture to blanch. (This helps the onion to not bother some people with sensitive stomachs, like my Grannie.)
- Drain peas, corn, and pimentos. Add to mixture. Gently blend ingredients. Add salt and pepper to taste.
- Refrigerate until chilled. (This salad is best when made in advance so that all of the flavors have a chance to incorporate.)
