english pea salad
I love this salad. I request it every Christmas, and finally got Grannie to supervise me while I made it so that it would be good. I don't trust myself to cook things like she does unless she is there to guide me through it until I feel comfortable that I haven't messed it up. The slightly sweet and sour nature of this dish has made it a family favorite.

Ingredients
- 1 cup vegetable oil
- 1 cup sugar
- 1 cup vinegar
- 1 can english peas
- 1 can white shoe peg corn
- 1 bunch green onions
- 1 jar pimentos
- - salt and pepper, to taste
How To Make english pea salad

Step 1Combine sugar and vinegar in microwave safe bowl. Stir until mostly dissolved. Add oil and heat in microwave until boiling.

Step 2Chop green onions and add to boiling mixture to blanch. (This helps the onion to not bother some people with sensitive stomachs, like my Grannie.)

Step 3Drain peas, corn, and pimentos. Add to mixture. Gently blend ingredients. Add salt and pepper to taste.

Step 4Refrigerate until chilled. (This salad is best when made in advance so that all of the flavors have a chance to incorporate.)
