I love this salad. I request it every Christmas, and finally got Grannie to supervise me while I made it so that it would be good. I don't trust myself to cook things like she does unless she is there to guide me through it until I feel comfortable that I haven't messed it up. The slightly sweet and sour nature of this dish has made it a family favorite.

Ingredients

1 c
vegetable oil
1 c
sugar
1 c
vinegar
1 can(s)
english peas
1 can(s)
white shoe peg corn
1 bunch
green onions
1 jar(s)
pimentos
salt and pepper, to taste

How to Make English Pea Salad

Step-by-Step

  • 1Combine sugar and vinegar in microwave safe bowl. Stir until mostly dissolved. Add oil and heat in microwave until boiling.
  • 2Chop green onions and add to boiling mixture to blanch. (This helps the onion to not bother some people with sensitive stomachs, like my Grannie.)
  • 3Drain peas, corn, and pimentos. Add to mixture. Gently blend ingredients. Add salt and pepper to taste.
  • 4Refrigerate until chilled. (This salad is best when made in advance so that all of the flavors have a chance to incorporate.)
