easy mushroom quiche
I absolutely love this quiche w/ sauteed shallots and mushrooms! Makes a great lunch served w/ salad.

Ingredients
- 1 - unbaked pie crust
- 1 tablespoon canola oil
- 1 tablespoon butter
- 1/3 cup chopped shallots
- 8 ounces favorite mushrooms, quartered. i used button mushrooms
- 1/2 teaspoon salt, divided
- 1 tablespoon minced garlic
- 1 cup chopped parsley
- 3 - eggs
- 3/4 cup light cream
- 1/4 teaspoon pepper
- 1 cup reduced-fat shredded swiss cheese, i used alpine lace cheese
How To Make easy mushroom quiche

Step 1Heat oven to 425. Line a 9" pie pan w/ crust. Place pie pan on a baking sheet, prick the crust w/ a fork. Bake 20 mins, let cool.

Step 2Reduce heat to 375. Heat oil and butter in lg skillet, over medium heat. Add shallots, cook 1 mins. Add mushrooms, cook 2 mins. Stir in parsley. Cook 2 mins more. Stir in garlic and 1/4 tsp salt. Cook 2 mins, turn off heat.

Step 3In lg bowl, whisk together eggs, light cream remaining salt and pepper. Sprinkle mushroom mix over bottom of crust. Pour egg mix over mushrooms. Sprinkle w/ cheese. Bake 25-30 mins, or until a knife inserted in center comes out clean.
