Over forty years ago, my mom bought an electric knife(all the rage at the time. It came with a small paperback cookbook. I tried this recipe from the book and it's been a favorite of family and friends ever sense. Enjoy!

Ingredients
- 4 - medium size zucchini, washed
- 1 - onion, large and peeled
- 1/2 pound mozzarella cheese
- 2 tablespoons butter
- 1 teaspoon onion salt
- 1/4 teaspoon oregano
- 1 - 8-oz. can tomato sauce
- - salt and pepper to taste (optional)

Step 1Preheat oven to 350 degrees.

Step 2Cut zucchini into 1/2 inch slices.

Step 3Thinly slice onion.

Step 4Thinly slice mozzarella cheese.

Step 5Cook zucchini and onion slices together in a covered skillet in butter until tender.

Step 6Add onion salt, oregano and tomato sauce. Salt and pepper to taste (optional).

Step 7Pour mixture into a 1 1/2 quart shallow casserole.

Step 8Top with mozzarella cheese slices.

Step 9Bake 30 minutes.
