Over forty years ago, my mom bought an electric knife(all the rage at the time. It came with a small paperback cookbook. I tried this recipe from the book and it's been a favorite of family and friends ever sense. Enjoy!

Ingredients

  • 4 - medium size zucchini, washed
  • 1 - onion, large and peeled
  • 1/2 pound mozzarella cheese
  • 2 tablespoons butter
  • 1 teaspoon onion salt
  • 1/4 teaspoon oregano
  • 1 - 8-oz. can tomato sauce
  • - salt and pepper to taste (optional)

How To Make delightful zucchini mozzarella casserole- connie's

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Cut zucchini into 1/2 inch slices.
  • Step 3
    Thinly slice onion.
  • Step 4
    Thinly slice mozzarella cheese.
  • Step 5
    Cook zucchini and onion slices together in a covered skillet in butter until tender.
  • Step 6
    Add onion salt, oregano and tomato sauce. Salt and pepper to taste (optional).
  • Step 7
    Pour mixture into a 1 1/2 quart shallow casserole.
  • Step 8
    Top with mozzarella cheese slices.
  • Step 9
    Bake 30 minutes.
  • Step 10
