cukes n sour cream w sweet red peppers & onions

I added a new twist to an old family favorite in this recipe, I added sweet Red Peppers, and chopped red onions & heavy whipping cream. Not only did it add lots of color and extra crunch, it tasted good too. My husband especially loved this dish which also makes me happy. I also decided to trim away the outer peel in every other strip to make the cucumbers more eye appealing. So happy I decided to add a new twist to an old Family favorite, now I have 2 slightly different recipes for one great tasting side dish. Try it and see if you don't like it too.

Ingredients

  • 6 large cucumbers, washed & peeled as desired(reserve a few slices to use as garnish if desired)
  • 2 bunches green onions, chopped fine or use food processor
  • 1/2 cup heavy whipping cream
  • 4 cups sour cream (2 pounds)
  • 1/2 teaspoon granulated garlic powder
  • 3/4 cup splenda or granulated sugar
  • 1 teaspoon dill, dried
  • 4-5 cloves garlic minced
  • 6 - mini red sweet peppers cut into rings & chopped
  • 1 small red bell pepper, chopped, reserve 2 tbs for garnish
  • 1/2 small red onion chopped
  • 1 1/2 tablespoons chopped dried chive plus extra for garnish
  • 1/2 teaspoon white or black pepper

How To Make cukes n sour cream w sweet red peppers & onions

  • Step 1
    MAKE AHEAD OF TIME TO ALLOW FLAVORS TO MARRY BEFORE SERVING. Wash & peel cucumbers as desired.
  • Step 2
    Slice cucumbers and place in colander, sprinkle with salt, and allow to sit and drain if time permits about and hour or so.
  • Step 3
    Crush minced garlic and add to large bowl.
  • Step 4
    Add chopped onions Splenda, red mini sweet peppers, and stir to mix.
  • Step 5
    Add chopped red onions, chopped red bell pepper (reserving some for garnish) & Chive, then stir to blend together.
  • Step 6
    Add sour cream a little at a time & whipping cream, then stir to blend together. Then add some of the cucumbers and stir to mix.
  • Step 7
    Add the remaining sour cream and cucumbers(saving a few to garnish top if desired) and stir to blend, add white or black pepper if desired, mix well.
  • Step 8
    Add mixture to large 9X12 X2 inch Casserole dish. Then top with additional cucumbers, chive, and sweet red peppers. Cover, chill and refrigerate till ready to serve.
