This is a delicious refreshing salad that's super easy to whip up. It's perfect for barbecues and potlucks, plus it's healthier than potato & macaroni salad.

Ingredients

  • 7 cups cucumber, sliced thinly (usually 3-4 cucumbers)
  • 1 - onion, sliced thinly
  • 1 - bell pepper, sliced thinly
  • 1 tablespoon salt
  • 1 teaspoon celery seed
  • 2 cups sugar
  • 1 cup apple cider vinegar

How To Make cucumber salad

  • Step 1
    Add sliced cucumbers to a large bowl, stir in salt. Set aside while cleaning and cutting pepper and onion. Letting them sit will bring out juice that will add to the marinade.
  • Step 2
    Add sliced peppers and onions to the cucumber mixture. Using clean hands, incorporate ingredients well.
  • Step 3
    In a separate bowl, mix sugar, celery seed, & apple cider vinegar. Stir until sugar is mostly dissolved. It will be thick.
  • Step 4
    Pour sugar mixture over the cucumber mixture. Combine well.
  • Step 5
    Refrigerate overnight or at least six hours prior to serving. The salad is complete when the liquid rises to the top of the bowl.
  • Step 6
    Tip: Taste one slice from each cucumber to ensure they're not sour. One sour cucumber can ruin the whole salad!
