Ingredients

8-10
parsnips, peeled and cubed
1/2 tsp
salt
boiling water
1/2 tsp
onion salt
1/8 tsp
pepper
1/2 tsp
salt
1
egg, beaten
1/3 c
fine bread crumbs
2 Tbsp
butter
1/4 c
bread crumbs

Step-By-Step

1Peel and cube parsnips and cook in boiling salted water until tender. Drain and mash. Beat in seasonings and egg. Add bread crumbs. Chill well. Make into 6 patties. Cover with additional bread crumbs and fry in melted butter until golden brown on both sides. Makes 6 servings.
