~ creamed cheesy corn ~

I tweaked another recipe I'd found, to put my own touches to it and make it my own...My family really enjoys it, so that's what counts to me. It paired well with my ~ Melt In Your Mouth ( crock pot cube steak .) I'm going to make this for both holidays coming up, with the addition of green onions and red bell pepper, I thought it looked quite festive. Enjoy!

Ingredients

  • 20 ounces frozen corn
  • 4 slices bacon - diced 1/2 - 1 inch - save 3 - 4 tablespoons of drippings
  • 1/3 cup red bell pepper, chopped
  • 4 - green onions, sliced - including green tops (1/2 cup)
  • 1/2 cup sweet onion - chopped
  • 1 1/2 cups cheddar cheese
  • 1 cup heavy cream
  • salt - & pepper to taste

How To Make ~ creamed cheesy corn ~

  • Step 1
    In my iron skillet, I fried the bacon until crisp. Remove bacon to a paper towel to drain. Save about 4 tablespoons bacon fat.
  • Step 2
    Over medium heat, in the drippings - add the peppers, green onion, onion and saute until just soft, not brown.
  • Step 3
    Add the corn & cheese to the onion mixture - salt & pepper. Continue cooking for 8 - 10 minutes, stirring often.
  • Step 4
    Add the cream and simmer until liquid starts to thicken. ( about 5 - 8 minutes)
  • Step 5
    Top with bacon and enjoy!
