Quick and Easy, full of flavor and color.
I used ingredients I had on hand, and came up with this dish. I hope you enjoy it!

Ingredients

  • 1
    spaghetti squash, halved, seeds removed
  • 1 tsp
    olive oil
  • 2 Tbsp
    butter
  • 3
    green onions, chopped
  • 1 small
    zucchini, chopped
  • 1-2
    sweet mini red peppers
  • 1 clove
    garlic, minced
  • 1 Tbsp
    lemon juice
  • 1/4 c
    parmesan cheese
  • 1/4 c
    feta cheese
  • ·
    salt and pepper

How to Make Colorful Spaghetti Squash

Step-by-Step

  1. Preheat oven to 400
  2. Rub halves of spaghetti squash, inside and out, and a sheet pan with the olive oil.
  3. Place squash cut side down in pan. Top with a tent of aluminum foil. Bake 20 minutes until skin is soft when pierced with a fork. Scrape insides out with fork and keep warm.
  4. Meanwhile, Melt butter in skillet. Add vegetables and garlic. Saute until tender.
  5. Add cooked squash. Saute until flavors mix, 5 minutes. Add lemon juice, Parmesan cheese, salt and pepper to taste. Saute 5 more minutes until heated through.
  6. Top with Feta cheese.
