Colorful Spaghetti Squash
I used ingredients I had on hand, and came up with this dish. I hope you enjoy it!
1spaghetti squash, halved, seeds removed
1 tspolive oil
3green onions, chopped
1 smallzucchini, chopped
1-2sweet mini red peppers
1 clovegarlic, minced
1 Tbsplemon juice
1/4 cparmesan cheese
1/4 cfeta cheese
·salt and pepper
How to Make Colorful Spaghetti Squash
- Preheat oven to 400
- Rub halves of spaghetti squash, inside and out, and a sheet pan with the olive oil.
- Place squash cut side down in pan. Top with a tent of aluminum foil. Bake 20 minutes until skin is soft when pierced with a fork. Scrape insides out with fork and keep warm.
- Meanwhile, Melt butter in skillet. Add vegetables and garlic. Saute until tender.
- Add cooked squash. Saute until flavors mix, 5 minutes. Add lemon juice, Parmesan cheese, salt and pepper to taste. Saute 5 more minutes until heated through.
- Top with Feta cheese.
