Ingredients For colorful spaghetti squash

  • 1
    spaghetti squash, halved, seeds removed
  • 1 tsp
    olive oil
  • 2 Tbsp
    butter
  • 3
    green onions, chopped
  • 1 sm
    zucchini, chopped
  • 1-2
    sweet mini red peppers
  • 1 clove
    garlic, minced
  • 1 Tbsp
    lemon juice
  • 1/4 c
    parmesan cheese
  • 1/4 c
    feta cheese
  • salt and pepper

How To Make colorful spaghetti squash

    Preheat oven to 400
  • 2
    Rub halves of spaghetti squash, inside and out, and a sheet pan with the olive oil.

    Place squash cut side down in pan. Top with a tent of aluminum foil. Bake 20 minutes until skin is soft when pierced with a fork. Scrape insides out with fork and keep warm.

    Meanwhile, Melt butter in skillet. Add vegetables and garlic. Saute until tender.

    Add cooked squash. Saute until flavors mix, 5 minutes. Add lemon juice, Parmesan cheese, salt and pepper to taste. Saute 5 more minutes until heated through.

    Top with Feta cheese.
