Quick and Easy, full of flavor and color. I used ingredients I had on hand, and came up with this dish. I hope you enjoy it!

Ingredients

  • 1 - spaghetti squash, halved, seeds removed
  • 1 teaspoon olive oil
  • 2 tablespoons butter
  • 3 - green onions, chopped
  • 1 small zucchini, chopped
  • 1-2 - sweet mini red peppers
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 cup parmesan cheese
  • 1/4 cup feta cheese
  • - salt and pepper

How To Make colorful spaghetti squash

  • Step 1
    Preheat oven to 400
  • Step 2
    Rub halves of spaghetti squash, inside and out, and a sheet pan with the olive oil.
  • Step 3
    Place squash cut side down in pan. Top with a tent of aluminum foil. Bake 20 minutes until skin is soft when pierced with a fork. Scrape insides out with fork and keep warm.
  • Step 4
    Meanwhile, Melt butter in skillet. Add vegetables and garlic. Saute until tender.
  • Step 5
    Add cooked squash. Saute until flavors mix, 5 minutes. Add lemon juice, Parmesan cheese, salt and pepper to taste. Saute 5 more minutes until heated through.
  • Step 6
    Top with Feta cheese.
