This recipe is so simple to make and absolutely delish. I have to credit my sister, who is in recovery for breast cancer and has made me as health conscious as she is. I use organic cauliflower and organic butter. Great healthy alternate to mash potatoes and loaded with nutrition .

Ingredients

  • 1 large cauliflower (organic preferably) stems removed
  • 3/4 cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon parsely (fresh)
  • 2 tablespoons butter (organic preferably)

How To Make cauliflower mash

  • Step 1
    In medium size pot on high heat, bring 6 cups of water to boil.
  • Step 2
    Place cauliflower in a colander on top of pot. Place lid on top of cauliflower to contain the heat. Steam cauliflower until soft. Approximately 10-15 minutes.
  • Step 3
    Place cauliflower in blender or food processor. Add milk, salt and pepper and puree until smooth. Place in serving dish and sprinkle with parsley!
