cauliflower dill salad

We like it on the light side , however, making it for a crowd, use regular mayo, they will think it is potato salad until they've taken a couple of bites. Light mayo reduces the calories, we just use the fat free ranch. Better yet, make your own, with fat free mayo, sour cream and seasoning. Want to get crazy, throw in some Feta cheese, there is low fat for that too. My point, you can fluff it to your liking if my favorite didn't work for you. No matter what, ENJOY!!

Ingredients
- 1 - cauliflower, cooked till tender
- 2 stalks celery
- 1 small onion, chopped
- 1 small red bell pepper
- 2 tablespoons fresh dill
- 2 tablespoons chopped dill pickle
- 2 tablespoons chopped cherry peppers
- 1 cup low fat or fat free ranch dressing
- 1 - carrot, sliced
- 1/2 - cucumber, peeled and chopped
- 2 tablespoons green olives, chopped
- - salt and pepper to taste
How To Make cauliflower dill salad

Step 1Boil your cauliflower till tender. Don't cook to mush, it is replacing potato salad, so give it a bite. Cool and set aside.

Step 2Prepare vegetables as in ingredients, chop, slice and place in large bowl

Step 3Add rest of ingredients, mix, salt and pepper to taste
