I saw this recipe in a magazine while at my doctor's office. I served it for dinner as a side to baked chicken. My family loved it!

Ingredients

  • 1 - head of cauliflower, separated in florets
  • 1 - packet dry good seasons italian dressing
  • 2 - eggs
  • 1/4 cup grated parmesan cheese
  • - parchment paper

How To Make cauliflower "bread"

  • Step 1
    Pre-heat oven to 325 degrees Grate or process the cauliflower florets until they resembled grains of rice. You can also use a mini chopper.
  • Step 2
    Next, combine cauliflower, italian dressing mix, eggs, and parmesan cheese, and mix well.
  • Step 3
    Place parchment paper on a rimmed baking sheet. Form cauliflower mixture into a square shape, approximately 1 inch thick. Bake 40 minutes. Using another parchment lined baking sheet, place on top of cauliflower pan, and flip cauliflower over on other side. Bake 15-20 minutes more.
  • Step 4
    Let it rest for 5 minutes, then slice into serving pieces.
