This recipe was one of my favorite side dishes my aunt made when we had dinner at her house. I continue the tradition at family dinners.

Ingredients

  • 4 c
    raw carrots, grated
  • 1 c
    butter, softened
  • 2 c
    eggs
  • 1/2
    brown sugar
  • 1- 1/2 c
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    lemon juice

How to Make Carrot Casserole

Step-by-Step

  1. Cream butter, add sugar gradually. Add eggs,
    Combine dry ingredients and add gradually to the mixture. Add lemon juice.
  2. Add grated carrots and mix well.( I use an electric mixer.)
    Grease a casserole dish well. Pour the mixture into the dish and Bake at 350' for and 1 hour and 15 minutes. Enjoy !!
