This recipe was one of my favorite side dishes my aunt made when we had dinner at her house. I continue the tradition at family dinners.

Ingredients
- 4 cups raw carrots, grated
- 1 cup butter, softened
- 2 cups eggs
- 1/2 - brown sugar
- 1- 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon lemon juice
How To Make carrot casserole

Step 1Cream butter, add sugar gradually. Add eggs, Combine dry ingredients and add gradually to the mixture. Add lemon juice.

Step 2Add grated carrots and mix well.( I use an electric mixer.) Grease a casserole dish well. Pour the mixture into the dish and Bake at 350' for and 1 hour and 15 minutes. Enjoy !!
