This is a great sidedish. Makes a nice change from potatoes.

Ingredients

  • 1/2 cup sliced onion rings
  • 1 clove garlic, minced
  • 1/2 cup apple juice
  • 1 cup peeled and grated apples
  • 2 tablespoons red wine vinegar
  • 1 1/2 tablespoons brown sugar
  • 1 - bay leaf
  • 1/4 teaspoon black pepper
  • 4 cups shredded red cabbage
  • 2 tablespoons chopped fresh parsley

How To Make cabbage sidedish

  • Step 1
    Spray a large saucepan with non stick spray. Add onions and garlic. Cook and stir over medium heat until tender, about 5 minutes.
  • Step 2
    Dilute apple juice with 1/2 cup water to make 1 cup total. Add to onions and garlic, along with apples, vinegar, brown sugar, bay leaf, and pepper. Stir and bring mixture to a boil. Stir in cabbage. Cover and simmer over medium heat until cabbage is tender crisp, about 12 minutes.
  • Step 3
    Discard bay leaf and stir in parsley before serving.
