BROCCOLI WITH SHALLOTS AND LEMON
Weight Watchers recipe: 2 points plus per serving
5 cfresh broccoli, cut into large florets, stems cut into large chunks
1 Tbsplight butter
1/2 cfresh challots, chopped
1 Tbspfresh lemon zest
1 Tbspfresh thyme, chopped
1/2 tsppepper, fresh ground
How to Make BROCCOLI WITH SHALLOTS AND LEMON
- Bring 1" of water to a boil in a large, deep skillet.
Add broccoli, cover, and cook until crisp-tender (about 3 minutes).
- Melt butter in same skillet. Add shallots; cover and cook, stirring often, until golden and tender (about 5 minutes).
- Add broccoli, lemon zest, thyme, salt and pepper.
Toss over low heat until broccoli is coated and hot, about 2-3 minutes.
Transfer to serving bowl.
- NOTE: If you don't have fresh thyme on hand, don't substitute dried ... go without, or use fresh parsley instead.
