Ingredients
- 1 cup all purpose flour
- 1 cup yellow cornmeal
- 1/2 teaspoon kosher salt
- 1 tablespoon baking powder
- 1 1/2 cups milk
- 2 - eggs, lightly beaten
- 3 tablespoons vegetable oil
- 2 cups chopped cooked broccoli
- - goat cheese and bacon for garnish, if desired
How To Make broccoli cornmeal cakes

Step 1In a medium bowl whisk together flour, cornmeal, salt and baking powder.

Step 2Whisk in the milk, eggs, and vegetable oil until smooth. Stir the chopped broccoli into batter.

Step 3Pour 1/2 cup batter into a hot, lightly greased skillet. Cook over medium heat 1 to 2 minutes each side. Repeat three times until all the batter is used. Top with goat cheese (or any other kind you prefer) and crumbled bacon.
