1 call purpose flour
1 cyellow cornmeal
1/2 tspkosher salt
1 Tbspbaking powder
1 1/2 cmilk
2eggs, lightly beaten
3 Tbspvegetable oil
2 cchopped cooked broccoli
·goat cheese and bacon for garnish, if desired
How to Make BROCCOLI CORNMEAL CAKES
- In a medium bowl whisk together flour, cornmeal, salt and baking powder.
- Whisk in the milk, eggs, and vegetable oil until smooth. Stir the chopped broccoli into batter.
- Pour 1/2 cup batter into a hot, lightly greased skillet. Cook over medium heat 1 to 2 minutes each side. Repeat three times until all the batter is used. Top with goat cheese (or any other kind you prefer) and crumbled bacon.
