This is a delicious side dish and is wonderful to take to pot lucks or family get-togethers. It disappears very quickly, so you may not have any leftovers. Enjoy!

Ingredients

  • 2 packages frozen broccoli, 10 ounce size, chopped
  • 1 can cream of mushroom soup
  • 3/4 cup mayonnaise
  • 2 large eggs, beaten
  • 1 cup grated cheddar cheese
  • 1 cup onion, chopped
  • - salt and pepper to taste
  • TOPPING
  • 1 package stuffing mix, 8 ounce size (i use pepperidge farm in the blue bag)
  • 1 stick butter

How To Make broccoli casserole

  • Step 1
    Preheat oven to 350 degrees. Spray a 9 X 13 baking dish with cooking spray, set aside.
  • Step 2
    Cook broccoli until tender and drain. In a large bowl, combine soup, mayonnaise, eggs, cheese, and onion. Add salt and pepper. Fold in broccoli.
  • Step 3
    Pour broccoli mixture into prepared baking dish and top with stuffing mixture. Bake at 350 degrees for 45 minutes.
  • Step 4
    TOPPING: Melt butter and mix with stuffing. Sprinkle on top of casserole.
