- 2 cans whole kernel corn, rinsed and drained
- 1 bunch cilantro, minced
- 2 - lime zest
- 2 tablespoons champagne vinegar
- 3 tablespoons lime juice
- 1 1/2 - jalapeno, seeded and minced
- 1 1/2 tablespoons olive oil
- - salt and pepper to taste
