- 2 small red bell peppers, deeded and thinly sliced
- 1 medium shallot, finely chopped
- 3 tablespoons red wine vinegar
- 1 tablespoon olive oil, extra virgin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
