  • 2 cans (15 oz) pinyo ot pink beans, rinsed and drained
  • 2 small red bell peppers, deeded and thinly sliced
  • 1 medium shallot, finely chopped
  • 3 tablespoons red wine vinegar
  • 1 tablespoon olive oil, extra virgin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
