This recipe is from the historic Battletown Inn of Berryville, Virginia. A great side dish for any holiday or occasion.

Ingredients

  • 7
    small yellow squash
  • 1 medium
    onion, diced
  • 1/2 c
    cream
  • 3 Tbsp
    butter
  • 1/4 c
    grated parmesan cheese
  • 3/4 c
    crushed saltine crackers

How to Make Battletown Inn Baked Squash

Step-by-Step

  1. Boil squash in salt water until tender. Drain and mash.
  2. Saute onion in butter. Add cream, cheese and cracker crumbs. Mix with squash.
  3. Pour into a 1-1/2 quart buttered casserole dish. Top with additional crumbs and dot with butter. Bake at 350 for 30 minutes.
